Strawberry Cupcakes

I'm not the biggest fan of fruit so what better way to get your 5 (kinda) a day by adding fruit to your cupcakes!



This is how to make my strawberry cupcakes

Cupcakes
100g plain flour
140g caster sugar
1.5tsp baking powder
Pinch of salt
40g unsalted butter at room temperature
120ml whole milk
1 egg

Buttercream
600g icing sugar sifted
Drop of pink food colouring
Drop of yellow food colouring
200g unsalted butter
1/2 teaspoon vanilla extract
Handful of strawberries

Method

1. Preheat the oven to 170°C (325°F) gas 3

2. Put flour, sugar and baking powder, salt and butter into a mixing bowl. Mix together with a electric whisker or large spoon until smooth

3. Spoon mixture into the 12 cases and cook for 20 mins

4. For the buttercream, mix the butter with the icing sugar and vanilla extracts until a smooth cream has formed. Then add a drop of pink and yellow food colouring, this will make the orange colouring.

5. Use a piping bag and metal nozzle of your choice, pipe the cream onto cooled cupcakes.

6. Cut the strawberries in half and leave on the stalk for added decoration. Place these on the top of each cupcake.


You will find the strawberry juice will soak into the cupcake, creating a nice strawberry flavour. Don't worry the cupcakes do not go soaky!

If you would like extra strawberryness (If thats a word) place chopped up strawberries into the cupcake mix. Yummy!
